浸發花膠程式
1. 先將花膠用冷水浸半天或一天
2. 煮沸清水,將花膠和數片檸檬一起放進沸水裡,用中火煮約十分鐘 (檸檬可除魚腥味道),熄火待至冷卻為止。
(視乎花膠厚薄,如處理厚花膠,可重複步驟 1 及步驟 2 )
3. 換清水把花膠放入雪櫃內待一晚 (魚肚發頭效果更佳)
4. 花膠加入薑蔥汆水,即可煮食,做出美味佳餚



溫馨提示: 由於花膠為膠質極重之物,容易黏底。為防燒焦,煮時宜先用竹墊墊底。
